Our Story
Chef Olivia Bailey is the owner and head baker of Hummingbird Bread Co. on Hornby Island. She brings over 15 years of culinary experience to her craft, having attended the prestigious Dubrulle French Culinary School in 2006 for a 5-star cuisine and restaurant ownership diploma. After working as a chef in various establishments, Olivia made the move to Hornby Island in 2015 and became the head chef at Sea Breeze Lodge, where she honed her skills in creating delicious and visually stunning dishes.
In 2020, during the pandemic, Olivia founded Hummingbird Bread Co. to offer the Hornby Island community fresh, homemade sourdough bread. She sold her bread on the Hornby Island Co-op picnic tables and offered a weekly sourdough delivery service, which quickly gained popularity. Today, Hummingbird Bread Co. is a thriving business, with a ‘brick-and-mortar’ trailer location that has been open for three summers—now entering our fourth.
Olivia is passionate about using only the finest ingredients and creating bread and baked goods. She takes pride in making each item by hand and using traditional baking techniques that have been passed down through generations. Her commitment to excellence is evident in every delicious morsel she bakes.
